Digby’s Vermont Maple Syrup Pancakes For The Trails
(cause you need to have pancakes on the trails in Vermont in case you find maple syrup)
1 cup organic all-purpose flour
1-1/2 teaspoons baking powder
1 cup whole milk
2 tablespoons canola oil
2 tablespoons maple syrup
Additional maple syrup (for the persons)
Combine the flour and baking powder in a bowl. In another bowl, combine the egg, milk, oil and syrup; stir into dry ingredients just until blended. Do not over mix! No tough pancakes here!
Pour batter by 1/4 cupfuls onto a lightly greased hot pan and turn when bubbles form on top of pancakes. Super easy, right? Cook until second side is golden brown. Serve with additional syrup for the persons.
Yield: 6 pancakes.
