Chicken Cacciatore For Dogs and People To Share

The last recipe in our retro series this month is probably a dish that you have had many times!  Chicken Cacciatore is Italian for “hunter”.  In cuisine, alla cacciatora refers to a meal prepared “hunter-style” with onions, herbs, usually tomatoes, often bell peppers, and sometimes wine.  Well, a lot of these traditional ingredients are of course bad or even dangerous for dogs. So we made a version that was not only dog friendly, but one that you can share.  For the persons, we do recommend adding some salt and pepper to your plate, and maybe even a glass of vino!  Your dog can have a bowl of the finest water!

Chicken Cacciatore For Dogs and People To Share

Ingredients

w体育1 pound of organic, boneless chicken thighs or breasts

8 ounces of organic diced tomatoes (no salt added)

w体育1 diced, organic bell pepper

1 tablespoon organic olive oil

w体育1 tablespoon dried, organic oregano

1 tablespoon diced, fresh basil for garnish

w体育1 cup of cooked, organic brown rice

Directions

Preheat your oven to 375 degrees.  Spray a deep, glass pan with non-stick cooking spray.  Place chicken in pan, top with bell pepper and diced tomatoes.  Sprinkle with olive oil and oregano, cover and bake for 50 minutes.  Let cool completely.

w体育Serve each thigh or chicken breast over a cup of brown rice with the sauce.  Sprinkle with fresh basil!  Serve!

Leftovers may be refrigerated for up to two days or frozen for up to two months in an airtight container.
